PIZZA
"Pizza in Teglia alla Romana" is what these pizzas are called in Italy, meaning "Roman pizza in the (blue) pan". Indeed, we use blue pans from Italy to make these pizzas, and a peculiarity of this type of pizza is that the hydration of the dough is off the charts. This yields a crunchy pizza crust with a beautiful, fluffy "alveolatura" or inner cloud, as we call it. Each pizza is freshly cooked in our Italian Moretti oven specifically made for this kind of pizza. We always offer those listed below, but also be sure to check out our list of weekly specials.
Each "pizza in teglia" is 4x8 inches. We cut each pizza into 4 to make it pleasantly bite sized. Generally, you would order 2-3 per person, so make a selection and dive in to the wonderful flavors of true Roman pizza! By the way, "teglia" is pronounced like "tell-ya".
